Couscous-Linsen Gemüse mit Paprika und Tomaten

Couscous-lentil vegetables with peppers and tomatoes

Couscous-lentil vegetables with peppers and tomatoes is a variation of the classic couscous salad. Red lentils and stewed peppers and tomatoes are added.

Ingredients

200 g Couscous
200 g red lentils
800 ml water
2 red pepper
3 tomatoes
4 EL olive oil
3 EL dryed mint
1 EL cumin
salt und black pepper

Cook the red lentils according to the instructions on the packet for approx. 12 min until al dente. Then drain and leave to drain.

Pour boiling water over the couscous and leave to soak for approx. 15 min. Then add the spices, stir occasionally and add the red lentils.

Wash and finely dice the pepper and tomato and then brown them in a hot pan in plenty of olive oil for 5 min.

Add the couscous and lentil mixture and mix well.

Season with salt and pepper and maybe some cumin and mint.

Serve

Place in the pan on the table (put a wooden board underneath!) or serve on preheated plates. A wonderful side dish for meat and fish. If you like, sprinkle with freshly chopped parsley or coriander.
