Mediterranean halloumi mushroom pepper skewers as a side dish for a barbecue or a delicious starter. Serve with a little basil pesto.
Ingredients
for 4 people
300 g halloumi
8 brown mushrooms
1 pepper
2 red onions
8 tbsp olive oil
Salt and pepper
Soak the wooden skewers for at least 30 minutes.
Clean the peppers, onions and mushrooms, cut everything with the halloumi into bite-sized pieces.
Skewer the vegetables and halloumi, brush with olive oil and season with salt. Grill in a grill pan or oven for 4 min on each side.
Variations
As I still had some sausage meat left over, I stuffed the mushrooms with it. Very tasty! You can also use other vegetables like courgette, aubergine or fennel for the skewers.
Serve
Serve with basil pesto, for example.
