Tomato and rucola salad with burrata and balsamic mustard dressing is a good starter or side dish.
Ingredients
400 g rucola
1 burrata
12 cherry tomatoes
For the dressing
2 tbsp balsamic vinegar
3 tbsp olive oil
2 tbsp yogurt
1 tsp mustard
herbs to taste
1 clove of garlic
pepper and salt
Peel and press the garlic, chop the herbs and mix everything together to form a creamy dressing. Leave in the fridge for approx. 1 hour. Season to taste with pepper and sal.
Wash the arugula and shake it off very well.
Halve 8 tomatoes and quarter 4 tomatoes.
Drain the burrata.
Arranging and serving
Arrange the rocket on a large plate, place the burrata in the middle and spread the dressing all over the salad. Then arrange the tomatoes and spread them on the plate.
Sprinkle with some freshly ground pepper or chopped herbs and serve.
