Shakshuka with peppers and mushrooms

Shakshuka with peppers and mushrooms? Shakshuka is a dish from Israel, but I have modified it a little here because of the current situation in my freezer.
Based on the shakshuka recipe, I have also added some paprika and fresh mushrooms.

Ingredients

4 eggs
4 tomatoes
2 onions
6-8 mushrooms
1 tin of tomatoes
1 pepper
2 tbsp tomato paste
paprika powder, sweet
Salt
Chilli powder or cayenne pepper or pepper to taste
3 tbsp olive oil
Garlic
Smoked paprika powder*
*only as a variation and try carefully at first, as it tastes very intense.
The quantities of spices are approximate.

Preparation

Chop the mushrooms, peppers and onion. Fry in a pan with a little olive oil until translucent. Add the tomato paste and fry.
Add the diced tomatoes and simmer. Now add olive oil and canned tomatoes. Let everything simmer for about 10 minutes.
Finally, “beat” the eggs into the sauce and continue to simmer until the eggs are set.
Fry the onions, peppers and mushrooms.
Add the tomato sauce and eggs
Shakshuka is ready
With fresh pita bread or baguette, shakshuka with peppers is great for breakfast, brunch or lunch.
