I made onion-garlic sauce from the leftovers of a neck steak (schwenker) pickled in onion. It would be a shame to just throw away the delicious onions. You can also make the onion-garlic sauce without soaking anything in it first. It goes well with pasta or roast onion.

Before grilling, I removed all the pieces of garlic and onion from the meat and then processed it further.

Ingredients

2 vegetable onions
1 clove of garlic
1 tbsp butter
3 tbsp oil
300 ml vegetable stock
2 tbsp tomato purée
1 tsp mustard
100 ml red wine
Salt and pepper

Peel and roughly dice the onions. Peel and roughly chop the garlic.

Lightly fry them together in butter and oil.

Then add the tomato paste and mustard and sauté for 3-4 minutes while stirring. The onions should be light brown at most.

Deglaze with red wine and reduce. Then add the vegetable stock. Bring to the boil briefly and reduce for about 15 minutes.

Finely purée the sauce with a hand blender. Season to taste with salt and pepper.

Use

Tastes great with bratwurst or schwenker (neck steak).
