Ensalada de papas – Spanish potato salad is a recipe I discovered while browsing. We tried it out and found it very tasty. However, it has nothing in common with the famous Ensaladilla russa, the Russian salad or Oliver salad.
You can serve the ensalada de papas on a colourful tapas evening. Ideally, you should fill it into small jars beforehand.
Ingredients
1 kg small waxy potatoes
20 cherry tomatoes
2 cucumbers
2 onions
3 cloves of garlic
1 tbsp curry powder
50 ml vinegar
100 g mayonnaise or sour cream
Salt and pepper
Wash the potatoes with skin and boil them in salted water with skin for about 20 minutes. After draining, let cool and peel.
Peel the onions and mix with vinegar and the spices.
Peel the cucumber, dice finely and leave in the fridge for 2 h, sprinkled with a little salt. This removes the water from the cucumber and the potato salad does not water down so quickly.
Quarter the cherry tomatoes and put 12 quarters aside for decoration.
Slice the potatoes and mix carefully with the onions, mayonnaise and quartered tomatoes. Refrigerate for at least six hours, better overnight, and allow to marinate thoroughly.
Serve
Shortly before serving, season everything again and decorate with the tomato quarters. If you like, you can sprinkle some freshly chopped parsley or chives on top.
