Saarland-style potato

Saarland-style potato salad is usually eaten warm in the Saarland. Since I’m a big fan of letting the marinade really soak through, I tried it lukewarm and ate it chilled the next day, after 20 h in the fridge. The recipe was not unusual except for the ingredient Melfor vinegar.

Special ingredients of Saarland potato salad

In the Saarland, potatoes are also called Grompern, Grumbern, Krumpern or Grommberde.

Melfor vinegar

is made in St. Ingbert in the Saarland from brandy vinegar, bee honey and herbs. It is available in different varieties. In one recipe, vinegar essence was used instead of Melfor vinegar.

Since I can’t find the vinegar from Saarland here in the Rhineland, I mixed 1 tbsp. herb vinegar with 1/2 tsp. bee honey.

Herbs

There were hardly any herbs in most of the recipes, and if there were, they were only on top as decoration. Only in two recipes were 2 tbsp each of chives and parsley added.

Maggi

Yes, you read that right. Maggi was added to some recipes. I leave it out and try a small portion with a little lovage.

Ingredients

800 g waxy potatoes
250 ml meat stock
80 g dried meat or bacon
1 shallot
1 tablespoon Melfor vinegar
1 tsp mustard
8 stalks parsley
6 stalks chives
Salt and pepper

Wash the potatoes with the skin and boil them in salted water with the skin for approx. 20 min. After draining, rinse with cold water and leave to cool for 1 h. Peel and slice. Then peel and cut into slices. Season the slices with salt and pepper.

Peel and finely dice the onions and finely dice the bacon.

In a pan with a little oil, slowly sauté the bacon over medium heat until translucent. It must not be allowed to brown. Shortly before the end, add the shallots and sauté for 1-2 minutes, stirring. Deglaze with stock, add mustard and vinegar.

Pour the broth over the potatoes and mix carefully.

(The Saarlander will now serve it lukewarm after about 1 h).

I let everything cool down together and put it in the fridge overnight.

Before serving, add chopped herbs and season with salt and pepper.

Serve

Decorate with a few herbs just before serving. Serve with a schwenker of schwenker.
