Arabic Potato Salad with Cucumber is an easy, meatless and very refreshing potato salad.
Ingredients
1 kg of potatoes
1 bunch of parsley
2 onions
! Cucumber
1 lemon
10 tablespoons olive oil
salt and pepper
Wash the potatoes with their skins on and boil them in salted water with their skins for about 20 minutes. After draining, let cool and peel.
Peel the cucumber and cut into thin slices.
Peel the onions and mix with the lemon juice, olive oil and spices.
Finely chop the parsley and add it.
Slice the potatoes and mix carefully with the sauce and cucumber slices. Store in a cool place for at least six hours, preferably overnight, and allow to soak well.
Serve
Just before serving, season everything again and decorate with a little parsley.
