Sjögräsnudlar alla norma

Sjögräsnudlar alla norma, the delicious Sicilian pasta sauce variant made so delicious by the fried aubergine.

Ingredients

400 g Sjögrass nudlar
1 eggplant
olive oil
Parmesan
basil leaves
2 shallots or other onions
2 cloves of garlic
400 g canned San Marzano tomatoes
30 grams of tomato paste
100 ml red wine
1 tbsp balsamic vinegar
1 tsp sugar
pepper and salt

Dice the aubergines, sprinkle with salt on all sides and leave to “sweat” for 30 minutes. Then wash off with water and leave to drain for 10 minutes.

In a pan, sear the aubergine cubes in olive oil over medium-high heat.

Peel and dice the onions and garlic cloves. and, as soon as the aubergine has turned slightly brown, add it. Brown a little while stirring for 5 minutes. Add tomato paste and deglaze with red wine after approx. 2 minutes.

Add the San Marzano tomatoes. Once the sauce begins to simmer, reduce the heat

Add balsamic vinegar and sugar and let reduce for 60 to 90 minutes.

The Norma sauce is then pureed.

Finally season with salt and pepper.

Warm the sjögras nudlar in the sauce for 5 minutes.

Arranging and serving

Turn up with a meat fork and a soup ladle and arrange on preheated plates. Serve immediately.
