European summer potato salad

European summer potato salad, a recipe from Urte, who I know through the Junior Chamber of Commerce (WJD/JCI). She is a member of our Facebook group “Show us your dish”. There she sent me her favourite recipe for a post about potato salad. A colourful mixture of different potato salads, which she named European Summer Potato Salad.

Garlic adds the zing here, radishes and cucumbers make it crunchy and summery.

Ingredients

1 kg waxy potatoes
200 ml vegetable stock
1 cucumber
3 spring onions
1 bunch of radishes
2 cloves of garlic
2 onions
3 cloves of garlic
2 tablespoons mustard
50 ml vinegar
1/2 bunch chives
a little herb salt
salt and pepper

Boil the potatoes with their skins for 20 minutes, leave to cool and slice when warm.

Wash the cucumber and slice unpeeled. Leave to drain for 30 minutes.

Also slice the radishes and drain them mixed with a little salt.

Peel and finely dice the garlic onions. Cut the spring onion into fine rings. Sauté everything in a pan with a little olive oil.

Mix everything with the lukewarm potatoes.

Cut the chives into fine rings and fold 2/3 of them into the potato salad. Season with salt and pepper.

Leave to stand in the fridge for at least 2 hours, better overnight.

Serve

Just before serving, season everything again and sprinkle with the remaining chives.

In a departure from Urte’s recipe, I added a few tomatoes.
