Pickled peppers – biber turşusu should not be missing from any Turkish buffet. They also go very well as a starter or side dish for a barbecue.

Ingredients

300 g hot peppers
4 stalks of parsley
3 stalks oregano
1 sprig of rosemary
2 leaves coriander
1 teaspoon paprika, sweet
2 cloves garlic
Olive oil
Vinegar

If you have fresh chillies, take 300 ml water and boil it together with 100 ml vinegar, salt and the spices and pour it over the chillies. Leave to infuse for 3 days and before serving, drain the water and mix the peppers with olive oil and freshly pressed garlic.

If you use pickled chillies, mix everything together in a bowl and leave to marinate for at least 4 hours, preferably overnight.

If you like it spicy, sprinkle some chilli flakes on top. If you mix 1 teaspoon of tomato paste with the olive oil beforehand, it will be colourful, and if you add beaver salcasi, it will also be spicy.

Serve with some Turkish pita bread as a starter or with grilled meat.
