Turkish pizza or lahmacun, the taste of Anatolia, is a thin flatbread covered with spicy sauce, which is then served plain or filled with lettuce, tomato, feta cheese, onions and meat.
We often each make our own filling according to our individual tastes and put small bowls on the table with garnishes and sauces such as cacik, tzatziki or olives, peppers and köfte.
Ingredients
The dough
600 g wheat flour
400 ml lukewarm water
40 ml olive oil
2 tsp salt
1 packet dry yeast or 1/2 cube fresh yeast
1 tbsp sugar
I dissolve the yeast in the lukewarm water, into which I add the sugar and 2-3 tbsp of the flour. After mixing, let the pre-dough rest for about 10 minutes.
Now add the remaining ingredients and knead a smooth dough either by hand or with a food processor. Place the dough in an oiled bowl, cover with a damp, clean towel and leave to rest for 1 h to allow the yeast to do its work.
Now preheat the oven to the highest setting and prepare the mince mixture in the meantime.
The mince mixture
500 g minced beef
4-5 tomatoes
2 each green and red pointed peppers
1 bunch of flat-leaf parsley
2 vegetable onions
4 cloves of garlic
2 tbsp beaver salcasi (Turkish pepper paste)
2 tbsp tomato paste
1 tsp thyme
2 tsp oregano
1 tsp. chilli
Olive oil
Salt and pepper
Clean the vegetables, peel them, remove the stalks and chop them finely. Finely chop the herbs, chilli and garlic. Alternatively, you can chop everything together in the Thermomix for 5 s on speed 6. Place the mince, beaver salcasi, tomato purée and chopped vegetables in a large bowl with the olive oil, salt and pepper and knead well.
The Turkish pizza
On a well-floured work surface, I portion the dough into 6-7 equal-sized pieces. These are rolled out very thinly and coated with the minced meat mixture (see below). Put them in the oven one after the other, and in about 4-5 minutes the lahmacun are ready. I stack them separately with baking paper and let them cool down so that the now still crispy dough becomes fluffy again. I can also put the cooled lahmacun in the freezer and defrost them again if needed.
