Spanish pasta salad with paprika is made with significantly more paprika and pimenton de la vera, unlike the Italian pasta salad. A good accompaniment to a barbecue.
Ingredients
400 g pasta, e.g. fussili
100 g salami
2 red peppers
2 tomatoes
1 tablespoon ketchup
2 tbsp mayonnaise
1 tsp pimenton de la vera
8 dried tomatoes
4 tbsp olive oil
5 stalks basil
2 tbsp white wine vinegar
1 tbsp olives
2 cloves of garlic
Pepper and salt
Prepare the dried tomatoes according to the recipe a few hours before or the day before.
Cook the pasta in salted water until al dente. Drain the pasta, mix with a little olive oil to prevent it from sticking together and leave to cool.
Chop the pickled tomatoes and the salami,
Pluck and chop the basil.
Wash and dice the tomato and pepper.
Mix the pasta with the other ingredients and add olive oil, spices and balsamic vinegar or white wine vinegar.
The salad should now be stored in a cool place for another 3-4 days.
Serve
Season the Spanish Pasta Salad with Paprika with salt, pimenton de la vera, pepper and possibly a little vinegar. Just before serving, decorate with basil leaves and serve.
