Papas arrugadas – Mallorcan potatoes – potatoes in a salt crust

Papas arrugadas – Mallorcan potatoes – potatoes in a salt crust a very good accompaniment to asparagus, grilled dishes and vegetables. The recipe comes from Mallorca. They are very similar to Canarian potatoes. The only difference in the recipe is the garlic and the bay leaf.

Ingredients

1 kg potatoes
2 cloves of garlic
1 bay leaf
Salt

The preparation of the Papas arrugadas is very simple. Take as many potatoes as you can fit into a pot so that the bottom is just covered.

Leave the skin on, remove any dark spots or sprouts beforehand. You only need to wash if there is still soil on the potatoes.

Cover the potatoes with water and sprinkle with plenty of salt.

Add a bay leaf and 1-2 cloves of garlic. Cook for about 30 minutes, depending on the type and size of the potatoes (fork test!).

Drain the water and leave to steam in the hot pot for another 5 min so that a nice salt crust can develop.

Serve the papas arrugadas

You can put them on the table in a large bowl or cazuela or serve them individually in small tapas bowls.

The Mallorcan potatoes are served with mojo verde, cacik, tzatziki or a little olive oil.
