Kebab or kebap?

In German spelling, both forms are possible. The Duden recommends taking kebab because of the soft pronunciation of the last syllable. In Turkish it is called kebap.

Döner and kebap what is the difference?

Kebab (kebap) is the Turkish word for roasted or grilled meat. The translation of döner is “rotating”. So a döner kebap (Turkish döner kebap) is a rotating meat that is grilled. Originally over a charcoal fire, today in every doner kebap stand on an infrared grill. If you ever have the opportunity to visit a good Turkish restaurant, you will notice that they rarely serve kebabs. It was originally invented in Berlin. It was there, in 1972, that Kadir Nurman is said to have put roast lamb with salad into a flatbread for the first time.

Döner Kebap and Gyros

Gyros, which originated in Greece, consists of slices of meat placed in several layers on a vertical skewer. In contrast to the doner kebab, where either minced meat is placed between the slices or the entire doner kebab spit consists only of minced meat, pork is also used for gyros. For the kebab skewer, only lamb, veal or chicken is used.

Sis kebap

The origin of it all is in Anatolia. The “Sis Kebab” consists of mutton grilled on a horizontal spit over charcoal. The roasted meat is then cut into strips and wrapped in bread dough. To what extent the good Mr. Nurman has now invented the kebab is questionable in my view.

Ingredients

1 teaspoon each
savory
Cayenne pepper
Chilli
Coriander
Cumin
Marjoram
Paprika powder, sweet
paprika powder, rose hot
Black pepper
Onion powder
Garlic powder
Dried parsley
2 tbsp salt

Roast the peppercorns, coriander seeds and cumin seeds in a pan without oil. Then grind finely in a mill.

Add the remaining spices and mix again briefly.

It is best to use everything up immediately or store in a cool, dry place in an airtight container.

You can also add fresh garlic, onion and parsley instead of the dried powders.

As there is hardly any salt in the spice mix, unlike in store-bought spice mixes, you need to add extra salt when seasoning the meat.
