Der Schwenker schwenkt den Schwenker auf dem Schwenker – The Schwenker swings the Schwenker on the Schwenker – there are phases you can not translate directly into another language. Even in Germany it is not easy to understand, if you do not live in the Saarland. There, the term “Schwenker” is used to describe the person standing in front of the Schwenker grill, the marinated pork neck steak as well as the swivel grill.

After 7 years of gas grilling, I was in the mood for a decent piece of meat from the charcoal grill. Fired up by a conversation with a man from the Saarland who gave me the phrase “Schwenker”, I started looking for a proper recipe. The rub is not used in this recipe, instead salt, pepper and bay leaves are added to the onion rings.

Ingredients

4 pork necks
Original St. Louis pork neck rub or any other of your choice
2 onions
optionally 2 cloves of garlic

Rub the pork necks the day before with the rub of your choice and marinate overnight with onion rings and garlic slices (optional).

The next day, prepare the swivel grill and let the coals glow well.

As soon as the “dragon sleeps”, a white layer forms on the glowing coals, the swivel is ready to go.

Grill the pans on both sides until crispy and brown, swirling them constantly.

Then hang the grill higher and sprinkle some beech flour on the embers. While the neck steaks are smoking in the beech smoke for 10 minutes, the barbecue operator can pour a beer. (without w!)

Serving

The Schwenker goes well with the usual barbecue side dishes such as potato salad Saarland style, beer and a good mustard.
