Arabic Potato Salad is an easy, meatless, and very refreshing potato salad. It tastes very good, but I don’t quite know what the Arabic thing is about it.
Ingredients
1 kg of potatoes
1 bunch of parsley
2 onions
1 lemon
10 tablespoons olive oil
salt and pepper
Wash the potatoes with their skins on and boil them in salted water with their skins for about 20 minutes. After draining, let cool and peel.
Peel the onions and mix with the lemon juice, olive oil and spices.
Finely chop the parsley and add it.
Slice the potatoes and mix gently with the sauce. Store in a cool place for at least six hours, preferably overnight, and allow to soak well.
Serve
Season to taste just before serving and garnish with a little parsley.
