Christmas market mushrooms – fairground mushrooms

Christmas market mushrooms with herb sauce or fairground mushrooms with herb sauce, however the small braised mushrooms always taste good. I

They were so popular that we could hardly keep up with our mushroom picking. The mushrooms were usually well-seasoned and accompanied by various sauces so that we were properly thirsty afterwards. Today I no longer deep-fry the mushrooms but braise them with onions in a pan.

One with herbs and one with garlic. The garlic sauce is an aioli made with sour cream or crème fraîche. Just squeeze the garlic into the sour cream, add a little salt and a dash of vinegar. Done.

The secret was in the specially prepared spice mixture for the mushrooms, which I will reveal to you today.

Ingredients

Summer Feast Mushroom Spice

Nutmeg
Curry
Paprika
Caraway
Salt and pepper

Put everything in a spice grinder and grind finely. Use immediately.

Mushroom pan

600 g mushrooms
1 vegetable onion
Butter

Cut the vegetable onion into quarter rings and sauté lightly in butter in a large pan.

Clean the mushrooms without water and cut them into approx. 3 cm pieces (halve, quarter and leave the small ones whole). Add to the stewed onions. Peel and finely dice the garlic and add to the pan.

At the very end, just before serving, add the summer festival mushroom seasoning over the mushrooms!

Herb sauce

1 cup sour cream
2 tbsp mayonnaise
1 tbsp tomato purée
10 ml port or sherry (without alcohol if there are children)
4 garlic cloves
2 stalks each
Rosemary
Parsley
Chives
Oregano
Thyme
2 leaves sage
2 basil leaves

You can vary the herbs according to your own taste. You can also make the sauce with just dill. Be aware that dill does not harmonise with all the other herbs and is better used alone or only with chives OR parsley.

Finely chop the herbs and garlic. Mix everything well and leave to infuse overnight in the fridge.

Serve

Put a portion of mushrooms on the plate, add a piece of crusty flat bread or baguette and a dollop of herb sauce. Serve with beer and rosé wine.
