Mediterranean courgettes gratinated with camembert as a small snack or starter.
Ingredients
1 courgette
1 tomato
80 g tuna fish
1 onion
100 g camembert
1 clove of garlic
3 tbsp olive oil
Thyme or oregano
Salt and pepper
Cut the courgettes lengthwise into 2 halves, scrape out the seeds with a small spoon and salt well. Leave to sweat on a rack for at least 30 minutes. Then rinse with water and drain.
Preheat the oven to 200 °C.
Peel the garlic and onions, wash the tomatoes and finely dice everything.
First fry the pine nuts in a pan and set aside, then fry the courgettes on both sides. Remove and place in an ovenproof dish.
Now sauté the tomatoes, garlic, onions and tuna in the same pan and season with salt, pepper and herbs.
Spread the mixture on the two courgette halves, sprinkle a few pine nuts on top and cover with Camembert slices.
Bake in the oven for approx. 10-12 min.
Serve
Arrange on a warmed plate. Either cut the courgettes in two or place them on the plate as a whole. It depends a little on the size.
Sprinkle with pine nuts and thyme or oregano and some pepper.
