Kebab spice mix

The kebab spice mix gives your meat a touch of the Bosporus. Goes well with lamb, veal, beef and chicken. Pork would also go well with it in terms of taste, but it doesn’t go well with kebab. Then make gyros with the gyros spice mix instead.

Most of the spice mixes you can buy also contain salt, onion, garlic and sugar. I never use sugar. I add the rest directly during preparation.

Ingredients

1 teaspoon savory
1 teaspoon cayenne pepper
2 teaspoons chilli
1 teaspoon coriander
½ tsp cumin
1 tsp marjoram
4 tsp paprika powder, sweet
1 teaspoon paprika powder, rose hot
1 tsp black pepper

Briefly roast the peppercorns, coriander seeds and cumin in a pan and then grind finely in a mill. Add the remaining spices and mix again briefly.

It is best to use everything up immediately or store in a cool, dry place in an airtight container.

When using, I also add fresh garlic, salt, onions and some fresh parsley.

You can also make a kebab butter or a kebab marinade with olive oil. Simply add the doner spice mixture to the butter or olive oil and leave to marinate for 8 hours.
